A Sunderland-based chef will represent the North East in the upcoming series of Great British Menu, with the regional heats airing on BBC Two on Tuesday 24 March at 6.30pm.
Ryan McVay, owner and chef of The Calabash Tree, will compete in the North East and Yorkshire heats, bringing his distinctive take on Caribbean cuisine to one of the UKโs most prestigious culinary competitions.
This marks a significant milestone for the city, asย The Calabash Tree becomes the first Sunderland-based restaurant to feature on Great British Menu.
Speaking about the experience, Ryan said:
โBeing selected to represent the North East is something Iโm really proud of. Thereโs so much talent in this region, so to be chosen is a huge honour. It pushed me in ways I didnโt expect, but it was an incredible experience and a chance to showcase Caribbean food on a national stage.โ
Ryanโs journey into the culinary world is far from traditional. A former firefighter, he transitioned into food after an injury forced him to change careers. Drawing on his Trinidadian heritage and family recipes passed down through generations, he built The Calabash Tree from the ground up โ entirely self-taught.
Ryanโs cooking is rooted in bold, vibrant Caribbean flavours, inspired by his upbringing and his motherโs Trinidadian background. His dishes aim to challenge common misconceptions around Caribbean cuisine โ focusing on depth of flavour rather than overwhelming heat.
His appearance on the show also shines a spotlight on a style of cooking that is still underrepresented in the North East.
